After blogging about the difference between a farmer and a rancher, I want to tell you a little story about an incident that happened a few years back. Quite a few years back actually. I LOVE this cookie!! It’s a great way to use up the last of a bag of potato chips. They are usually all broken up and get tossed anyways, so why not make some yummy cookies! This cookie tastes like those pecan shortbread cookies you buy at the store. Potato Chip Cookies -makes 7 dozen1 1/2 cup sugar3 sticks butter or margarine2 egg yolks2 tsp vanilla1 1/2 cup crushed potato chips1 tsp baking soda3 cups flour1 cup pecans (or walnuts) Mix all ingredients together well and roll into balls the size of a walnut.
