This is a recipe that I have had forEVER!!! It has always been my go to bar cookie when I am hosting a party. Mostly because they are fast and easy (which is my kind of recipe). Potato Chip Pecan Cookies
I LOVE this cookie!! It’s a great way to use up the last of a bag of potato chips. They are usually all broken up and get tossed anyways, so why not make some yummy cookies! This cookie tastes like those pecan shortbread cookies you buy at the store. Potato Chip Cookies -makes 7 dozen1 1/2 cup sugar3 sticks butter or margarine2 egg yolks2 tsp vanilla1 1/2 cup crushed potato chips1 tsp baking soda3 cups flour1 cup pecans (or walnuts) Mix all ingredients together well and roll into balls the size of a walnut.
