Potato Chip Pecan Cookies

I LOVE this cookie!!  It’s a great way to use up the last of a bag of potato chips.  They are usually all broken up and get tossed anyways, so why not make some yummy cookies!  This cookie tastes like those pecan shortbread cookies you buy at the store.  

Potato Chip Cookies -makes 7 dozen
1 1/2 cup sugar
3 sticks butter or margarine
2 egg yolks
2 tsp vanilla
1 1/2 cup crushed potato chips
1 tsp baking soda
3 cups flour
1 cup pecans (or walnuts)

Mix all ingredients together well and roll into balls the size of a walnut.  Place on an ungreased cookie sheet, pressing down with a fork.  Bake for 12 minutes at 350 degrees.
